The source
Apple owns the identity. Anything that supports it must remain subordinate and be named plainly; the final supporting substrate is still being tested.
Fruit is selected for aromatic maturity and living acidity, not yield alone.
Yeast must carry orchard perfume forward without creating artificial sweetness.
Wood may frame the finish; it may not become the main flavor.
Flavor profile
Aroma
Ripe golden apple, peel, blossom, and restrained fermentation fruit.
Palate
Rounded fruit balanced by bright acidity and controlled warmth; dry rather than syrupy.
Structure
Supporting substrate and oak must add body and length without overtaking the fruit.
Finish
Dry apple skin, gentle cask spice, and a clean, lingering orchard finish.
Golden Apple is not yet a finished release. The house apple, supporting substrate, final formula, maturation, proof, and legal designation remain in controlled development.
From The Book of Gold
